
Easy Chicken Chili and Cornbread
This pairs well with my Easy Cornbread below.
Easy Chicken Chili Ingredients:
- 2 Great Northern Bean cans drained & rinsed (or white beans)
- 4-6 Cooked and cubed chicken thighs
- 1 Jar salsa (your choice)
- 1-2 Cans of corn (don’t drain)
- 1- 8 or 16 oz Block of pepper jack and/or monterey jack cheese
Combine all these ingredients in your crock pot and cook on low for 4-8 hours. DELICIOUS!!
Easy Cornbread Ingredients:
- 1 cup All-purpose flour
- 1 cup Yellow cornmeal
- 1/3 cup White sugar (can use up to 2/3 cups if desired)
- 1 tsp Salt
- 3 1/2 tsp Baking powder
- 1 Egg
- 1 cup Milk
- 1/3 cup Vegetable oil
Directions:
Preheat your oven to 400 degrees. Butter a pie pan or an 8×8 glass pan. Mix together all 5 dry ingredients. Next, in a separate bowl, mix together the 3 wet ingredients. Then combine all the ingredients into one large bowl by turning the batter over onto itself until it no longer shows any dry ingredients. (Important…Do not overmix.) Pour the mixed batter into your greased glass pan and cook for about 20-23 minutes or until a toothpick inserted in the center comes out clean. DELIGHTFUL!!

Breakfast Egg Muffins
My favorite combination is onion, cheese, potatoes and spinach. Try different ingredients and see which one you prefer.
Ingredients:
- 12 Large eggs
- 2 Tbsp. finely chopped onions
- Salt, pepper and garlic powder to taste
Topping Options:
- Small diced potatoes
- Cooked bacon
- Small sliced Mushrooms
- Grated cheese (whatever you like)
- Diced tomatoes
- Diced peppers
- Torn spinach
Directions:
Heat your oven to 350 degrees. Spray the muffin pan with nonstick oil. Beat the eggs and add the onion and spices. Pour the egg mixture into the muffin pan until it is half full and then add your favorite toppings. Bake for about 30 minutes or until a toothpick inserted comes out clean. Remove from the oven and cool slightly before serving. Pairs well with seasonal fruit or toast. Enjoy!!

Quick and Easy Sweet Oat Cereal
Serves: 4
Save leftovers in an airtight container. Refrigeration not necessary.
Ingredients:
- 4 cups Whole Grain Oats
- 1 tsp Salt
- 1/4 cup Maple Syrup
- 1/2 cup Unsalted Almond Butter
Directions:
Mix the first two dry ingredients. Add the remaining ingredients and mix thoroughly. (I use my KitchenAid mixer for this) Serve in a bowl with your choice of dairy or a plant based milk. Super!!

Leek, Mushroom & Ricotta Cheese Frittata

Ingredients:
- 2 Tbsp. olive oil
- 1 Leek sliced
- 10 Mushrooms sliced
- 8 Large eggs
- 1/2 – 1 cup Ricotta cheese (I like it with more cheese)
- 1/4 cup Parmesan cheese grated
- Salt and pepper
Directions:
Heat your oven to 400 degrees. Spray olive oil on the pie pan. Sauté the onions and mushrooms in oil until golden brown. Mix the eggs, ricotta, and parmesan in a separate bowl. When the onions and mushrooms are done cooking, combine them with the egg mixture. Place all the ingredients in the pie pan and bake for about 30 minutes or until a toothpick inserted comes out clean. Remove the frittata from the pan and serve with seasonal fruit. YUM!!
